Happy Meatless Monday!




Zoe’s Dandelion pasta

Ingredients
Dandelions
Sea Salt
Black pepper
Garlic
Onion
Tomatoes
Lemon
Pasta of choice (I used spaghetti)
Vegan cheese

Sauté onion, garlic, tomatoes, chopped dandelions in a little oil.  Season with salt and pepper.  At desired doneness squeeze in fresh lemon then add vegan cheese.  Toss with cooked pasta.
