Happy Meatless Monday 102819




Easy Bean Dip




Ingredients
1 garlic clove minced, or ½ teaspoon of garlic powder
½ cup onion, chopped
15 oz. can of beans, drained and rinsed
1 tablespoon oil
1 tablespoon vinegar
½ teaspoon salt
¼ teaspoon pepper

Combine all ingredients in a large bowl or blender.  Mash or blend together.  Serve with crackers or veggies.

Happy Meatless Monday 102119




Spinach & Bean Quesadillas



Ingredients
2 tablespoons oil
Cooked black beans (or beans of choice)
Spinach
2 teaspoons of garlic powder
1 teaspoon chili powder
Shredded vegan cheese
(10 inch) flour tortillas

Heat oil in a large skillet over medium heat.  Add spinach, beans, garlic powder, chili powder.  Saute' till desired doneness of spinach.   Place mixture on tortillas, top with cheese.  Fold tortillas over, pressing lightly with fork to flatten.  Return tortillas to greased skillet, cook over medium heat until golden brown on each side and cheese is melted (about 3 minutes).

Happy Meatless Monday 101419




So Good For You broth



Ingredients
Onion (fresh and powdered)
Garlic (fresh and powdered)
Ginger (fresh and powdered)
Liquid Aminos (like a soy sauce)
Lemon, squeeze of juice, add lemon wedge to pot
Seaweed Snacks
Salt
Black pepper
Cayenne
Basil
Curry
OPTION:  If desired, add cooked rice or noodles to make it more filling.

Put water in a large soup pot, bring to boil, add all of the above ingredients to taste.

Happy Meatless Monday! 100719




Ultra Quick & Easy Creamy Tomato Soup


Ingredients
Oat milk (or nut milk of choice)
Organic ketchup
Basil flakes
(Optional)  Crushed red pepper flakes for a spicier version

Put desired servings of milk in saucepan, simmer to heat.  Add ketchup to taste. Add basil flakes – heat till hot.
That’s it – you’re done!
