Spinach & Bean Quesadillas
Ingredients
2 tablespoons oil
Cooked black beans (or beans of choice)
Spinach
2 teaspoons of garlic powder
1 teaspoon chili powder
Shredded vegan cheese
(10 inch) flour tortillas
Heat oil in a large skillet over medium heat. Add spinach, beans, garlic powder, chili powder. Saute' till desired doneness of spinach. Place mixture on tortillas, top with cheese. Fold tortillas over, pressing lightly with fork to flatten. Return tortillas to greased skillet, cook over medium heat until golden brown on each side and cheese is melted (about 3 minutes).
